To be eligible for the SIT30821 Certificate III in Commercial Cookery, learners must be at least 17 years of age. No prior industry experience is required.<p><strong>Practical placement</strong><br>Learners must complete a five-week practical placement at a restaurant or café approved by HCB teaching staff:<br>• 20 hours per week <br>• 100 hours in total <p>Placement requirements will be discussed during the pre-training review.<br>The unit SITHCCC043 Work effectively as a cook (Release 1) requires a minimum of 48 complete service periods, covering a combination of breakfast, lunch and dinner. These must be completed in an operational hospitality workplace or a simulated industry environment established for assessment.<p><strong>Before placement</strong><br>Learners will receive guidance on placement arrangements and duration, the Practical Placement Agreement, learner responsibilities, Disclosure Statement and Discussion Checklist.<p>Depending on the host business, evidence may include immunisation records, licences and registrations, Working with Children Check (WWCC), NDIS Check, National Police Check and Food Handlers Certificate.<p>The Practical Placement Discussion Checklist must be completed before placement begins.

Prior to enrolment all applicants are required to complete a literacy and numeracy assessment and attend a pre-training interview. These will assist with determining your suitability to the course, verify your training plan, and identify any learning support needs.
